penne with spinach, cherry tomatoes & blue cheese sauce

8 oz. uncooked penne
1 t. olive oil
2 c. cherry tomatoes, halved
½ t. salt
¼ t. crushed red pepper
  3 garlic cloves, minced
8 T. heavy cream
1/4 c. blue cheese
2 c. fresh spinach

  • cook pasta according to package directions, omitting oil
  • heat oil in large skillet, add cherry tomatoes, salt, crushed red pepper & garlic & cook 1 minute, stirring occasionally

  • stir in heavy cream  & cheese, cook 2 minutes, stirring constantly
  • stir in spinach & pasta, cook 1 minute or until spinach wilts, tossing occasionally
Yield: 4 servings
