Cassidy helped me make this quick soup for dinner. Hope you enjoy it.
Curried Pumpkin Soup
- 1 large onion, chopped
- 3 T. butter/margarine
- 2 extra large cubes veggie bouillon (~4 tsp. veggie bouillon)
- 4 cups hot water
- 1 29 oz. can pure pumpkin puree
- 2 T. curry powder, or to taste
In large pot, saute onions in butter over medium-low heat until soft. Dissolve bouillon in hot water and add to onions. Add pumpkin puree and curry powder, and stir to incorporate. Simmer on low for 45 minutes - 1 hour. Serve with sour cream and croutons.
