pumpkin-o-rama: curried pumpkin soup

It looks, smells & tastes like fall in the Lumpkin household.

Cassidy helped me make this quick soup for dinner. Hope you enjoy it.

Curried Pumpkin Soup

  • 1 large onion, chopped
  • 3 T. butter/margarine
  • 2 extra large cubes veggie bouillon (~4 tsp. veggie bouillon)
  • 4 cups hot water
  • 1 29 oz. can pure pumpkin puree
  • 2 T. curry powder, or to taste
In large pot, saute onions in butter over medium-low heat until soft. Dissolve bouillon in hot water and add to onions. Add pumpkin puree and curry powder, and stir to incorporate. Simmer on low for 45 minutes - 1 hour. Serve with sour cream and croutons.
